So much attention is paid to all kinds of technologies to extend the shelf life of refrigerated food, with fancy supply chain efficiencies, inventory forecasting, and the like. Then you find out that, at the end of this entire process, stores restock their frozen food cases by bringing out 10 pallets at once and letting them sit out in the open for hours while the re-stocker moves from palette to palette and case to case. In the meantime, several hours have gone by with all that food sitting at room temperature.
